This Italian selection of Black Scorzonera is from our friends in the Forli-Cesena region. It is generally considered superior to the common US selection. It is known for consistency, and flavor. The skin of the roots is black and the flesh is white. Related to Parsnips, it is grown like Parsnips, with a typical oyster flavored overtone. Scorzonera is an ancient rootcrop still utilized in simple dishes, but now being 'rediscovered' by haute cuisine fans. Untreated seed.
