Salsify and Scorzonera are very similar. Salsify has upright grass-like leaves and the second year flowers are edible and purple in color. The Salsify root is white fleshed and off-white skinned much like a Parsnip (a close relative but a quite different flavor.) Our seed from Italy germinates well and roots deeply. Untreated seed.
