Italian root chicory which is dug up as needed from fall to spring and prepared in various ways. The white roots are a bit bitter tasting, but very healthy and wonderful in salads and other dishes once prepared properly. The dried and ground root may be blended into coffee, used as a coffee substitute, or is often the base ingredient for herbal teas. Untreated seed.
