In the summer produces long green leaves, which become wine red in autumn-winter. Similar in form to the sugar loaf chicories, but with the rich coloring in leaf and vein that really sets this apart. Great fresh or braised. Needs cool weather for the characteristic color and flavor. Peel away outer leaves to reach the head. Untreated seed.
