Spinach prefers cool weather. Warm temperatures, erratic moisture, or dry conditions can induce bolting or poor leaf quality. Plant in cool soil, 55-65F, rich and low acidic (ph 6.5-7.5). Keep evenly moist and fertilize with nitrogen rich organics such as blood meal. Direct sow 1/2 inch deep in rows about 1 foot apart. Thin to 1 inch for baby leaf production, or 3 inches for mature leaf production. Harvest individual leaves, or cut the whole plant when ready.
