Salsify and Scorzonera are ancient root crops recently being 'rediscovered' here in the US. They are grown similar to Parsnips, sown in warm soil (60-75F) that is not heavily fertile. Keep soil evenly moist. Plant 1/2 inch deep, closely spaced, and thin to 3-4 inches apart. Harvest in fall, store well in cool cellar or refrigerator.
