Leeks are a great alternative to onions, adding a bit sweeter flavor when cooked. Plant in cool soil, 60-70 F, in spring or start indoors 8-10 weeks before last frost. Sow 1/4 inch deep and 1/4 inch apart in rows 12-18 inches apart. Thin or transplant to 4-5 inches apart. Harvest once 1/2 inch or more in diameter as needed, and remember that leeks are cold and frost tolerant, so leave in soil until you need them. Add soil around the stalks as they grow to increase the 'white' blanching of the stem.
