SALSIFY & SCORNZONERA SEED SALSIFY & SCORNZONERA SEED

Originating in the Mediterranean area, scorzonera and salsify were foraged and used by the ancient Romans as well as the Greeks. People never thought to cultivate them until sometime around the 1500s. They were then used for ornamental, medicinal, and culinary purposes. In the Middle Ages, scorzonera was considered a powerful tonic and snakebite cure ? hence the common name 'viper's grass'. Salsify was brought to America in the 1700s and was at one time a popular root crop. When modern refrigeration and shipping techniques made the storage of perishable foods easy, salsify fell out of favor.

(SZ02) SCORZONERA NOIR DE RUSSIE

(120 days) Also known as 'Giant Russian' and 'Black Salsify', it is black-skinned with a white interior, and is one of the most highly prized vegetables of European chefs. Cultured and grown like parsnips, it has a oyster flavored overtone. Used in haute cuisine in place of potato. Approx 450 seeds UNTREATED - $2.39

120 days) Excellent Heirloom salsify offered in the U.S. since at least 1894. 8 " long roots taste like fried oysters when sliced and French fried.
