A wonderful Italian delicacy, the Poplar Mushroom (It. Pioppino-under the Poplar tree) has a beautiful color and firm texture particularly well suited for cooking in your favorite dish. Actually quite rarely found here in the US, it has a unique non-mushroom flavor.
